These spiraly scones are baked to look like one giant cinnamon bun, with a swirl of buttery cinnamon filling running throughout. Only instead of fluffy, yeasted cinnamon rolls, you get a slightly dense, very tender and toothsome scone crumb. And there’s no need to wonder whether the ancient yeast in the back of your fridge is still alive, or if it has finally shuffled off. These are the perfect accompaniment for an afternoon cup of tea or coffee.

I love feta so much, and I eat a lot of it. I find it really versatile and as long as I have some in the fridge I feel confident that I can pull together some sort of tasty meal, even when other supplies are low - something from the pantry or freezer, plus some vegetables, even the wilty, bottom-of-the-crisper variety, can nearly always be combined with feta to make a meal I’ll get excited about.

Macadamia, coconut, white chocolate cookies

White chocolate is tricky; it just seems too sweet, without a whole lot of other stuff going on to balance the sweetness. But I always really love white chocolate in macadamia and white chocolate cookies - especially if they are really chewy.

I don’t feel like I ate enough ice cream this summer. I can’t believe it’s already September; I swear summer just started. And in my mind, the summer was going to involve eating a whole lot more ice cream than I did. But I started a new job at the start of the summer and I didn’t take any summer holidays so overall I felt a bit less summery than usual. So summer felt busy, and I spent a lot of summer slightly worrying (about things like, should we buy an air filter for our increasingly regular wildfire season that brings an unpredictable number of days of smoky, sooty air each summer? And, how exactly do I do my new job? And how can we stop the raccoons that, while very charming to look at, have decided to use our tiny shed roof as a bathroom - FYI it’s surprisingly dangerous). The summer zoomed by without quite as much frolic and ice cream and lake swimming as would have been ideal. I mean, I certainly ate some ice cream, just not in the kind of summery, near-daily quantities that I had dreamed about.

This grapefruit loaf is a perfect Spring treat, the bright, sunny grapefruit makes the cake feel light and just a bit tart. It’s a great snacking cake to have with afternoon tea or coffee.

Salmon wellington, or salmon en croute, feels like a really impressive dish to make, but it’s deceptively easy. Serving it with a lemony cream sauce sends it over the top, especially if you add the shrimp to the sauce. But with or without the shrimp, this is still delightful.

White chocolate can sometimes be way too sweet, so I also salted the tops of the cookies just a little, to round the sweetness. Also, I think it’s crucial to just slightly underbake them so they stay chewy and soft.
